Ingredients
  

  • - 200 g all-purpose flour
  • - 200 g salty cheese well drained and finely grated
  • - 100 g lard or butter if preferred
  • - 100 g sour cream
  • - 1 egg beaten (for brushing)
  • - Poppy seeds sesame seeds, or cumin seeds (optional topping)

Instructions
 

  • In a large mixing bowl, combine flour, grated cheese, lard, and sour cream. Mix until a soft dough forms.
  • Knead lightly until smooth and well combined.
  • Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or up to 48 hours for make-ahead convenience.
  • Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  • Roll out the chilled dough on a lightly floured surface.
  • Cut into sticks or small round shapes, depending on preference.
  • Place on baking tray and brush with beaten egg.
  • Sprinkle with seeds if using.
  • Bake for 15–20 minutes or until golden and crisp.
  • Let cool slightly before serving — they become crispier as they cool.

Notes

- Lard gives the most authentic flaky texture, but butter can be used as a substitute.
- Dough can be prepared ahead and stored in the fridge for up to 48 hours.
- For extra flavor, add a pinch of paprika or black pepper to the dough.
- Store baked crackers in an airtight container for up to 4–5 days.
